Few know that the Taiwan is the most mountainous place on earth. On this small island are nearly 300 peaks that soar to over 3,000m above sea-level! The year-round climate conditions here—particularly in Taiwan’s central highlands where there is plentiful rain and a dramatic shift in temperature between daytime and nighttime—are also very conducive to tea cultivation. High Mountain (or Gaoshan) oolong has become known as Taiwan’s premier artisan tea: it’s extremely labor-intensive to cultivate, with all processing taking place by hand, and so naturally it is only available in limited batches. This tea yields perhaps the most complex flavor palette of any oolong, with a delightful floral aroma.
